From Andy Roasters' Colombia Las Palmas by Abelardo Alvear, this double anaerobic Bourbon Aji from Finca Las Palmas in Bruselas, Pitalito, Huila is one of the most refined and complex coffees in the Pink Series. Two rounds of anaerobic fermentation — 30–38 hours in sealed bags, then 80 hours submerged in tanks — build a layered, expressive profile: orange juice brightness, canned peach sweetness, and a distinctive bay leaf herbal note.
